This is a Bone-in cut of pork, taken from the rib section of the loin, featuring a large eye of loin meat and a rib bone, often with a layer of fat on the outside. Rib chops are tender and flavorful in nature, with a mild flavor and a little more fat than loin chops.  Due to the lean nature of the meat, rib chops are best cooked using high-heat methods like grilling, broiling, or pan-searing to prevent them from drying out.
