Flank Steak is a long, flat cut with a significant grain, and is known for its bold flavor and chewiness.  Cutting across the grain makes the meat more tender. It's taken from the abdominal muscles of the cow. Flank steak can be grilled, pan-fried, broiled, or braised for increased tenderness. Good for stir-fry and a good alternative to the traditional Skirt Steak for fajitas.
